The pitmaster on site
Michael Quessenberry grew up on the Arkansas Trav'ler circuit and still cooks the championship sauces and rubs his father Jim made famous. You work directly with the pitmaster planning your menu, timeline, and guests.

Optional detail
Full-event menus below — for smaller crowds, see small party packages above. Every feast scales from championship recipes with Sauce Beautiful pairings.
Award Winning Grand-prize centerpiece
The standing rib roast that won Ireland — carved thick for every guest, finished with Sauce Beautiful White and horseradish at the table.
Crowd-pleasing championship spread
A full buffet built from Jim's kitchen classics — smoked meatloaf, Imperial stew, and competition-style glazed ribs.
Fall centerpiece & smoke
Butterflied stuffed pork loin smoked over apple wood, paired with reverse-seared chops for a polished plated or buffet service.
Sliders, smoke & white sauce
Bacon-wrapped quail sliders and smoke-then-sear chuckeye — the same game-day energy Michael brings to Northeast Arkansas events.
Sample the championship lineup
Lower service format — sauce, rub, and basting marinade tastings built around the same recipes on our site. Ideal for pickups and intimate groups.
Mix recipes from the cookbook
Pick any combination from our recipe collection — Michael will help you scale servings, timing, and Sauce Beautiful pairings for your guest count.
Every guest at the table
BBQ is our specialty — we still plan vegan, vegetarian, gluten-free, and allergy accommodations when you flag them in the inquiry form.
Championship BBQ is the centerpiece, but Michael builds the menu around your headcount — including vegan, vegetarian, gluten-free, and allergy accommodations when you tell us upfront.
Smoked vegetable medleys, salads, grains, cornbread (when appropriate), and sauce pairings can be scaled for guests who skip the pit. Sauce Beautiful Original and Hot are vegan-friendly; White contains mayonnaise and is not vegan.
How many guests need accommodations, and what are the specifics? Michael quotes and preps separately so nobody is stuck with a plate they can't eat.
Preferred venue
Michael frequently hosts at the Elks — kitchen access, plenty of seating, and a built-in sense of occasion. Availability depends on two calendars: Michael's and the lodge's. Off-site venues work too; the estimator adds a travel/setup fee.
Simple process
Date, headcount, and event type — the estimator gives you a ballpark; Michael refines the quote.
Michael checks his calendar and, for Elks events, coordinates with Lodge #498.
